Healthy Gingerbread Men

Ingredients:

  • 140g almond Meal
  • 120g oat Flour
  • 100g xylitol
  • 1 tbs ground ginger
  • 2 tsp ground cinnamon
  • ⅛ tsp ground nutmeg
  • ⅛ tsp ground cloves
  • 1 tsp baking powder
  • ½ tsp salt
  • 170g molasses
  • 75g coconut oil (melted)
  • 2 tsp vanilla extract
  • 1 tsp stevia

 

Directions:

  1. Preheat your oven to 180°C.
  2. Whisk together the almond flour, oat flour, xylitol, ginger, cinnamon, nutmeg, cloves, baking powder and salt in bowl.
  3. Mix the molasses, coconut oil, vanilla and stevia on low speed in a mixer bowl until completely mixed.
  4. Dump the dry ingredients in the stand mixer bowl and mix until smooth.  The dough will be a lot stickier then normal dough and a bit more fragile.
  5. Turn dough out onto a well-floured board, if you are not gluten free using a small amount of white flour makes kneading easiest. You can also use more almond flour or other gluten free flour.
  6. It doesn’t need a lot of kneading. Simply form a well-mixed ball, cover in glad wrap and place in the fridge for fifteen minutes.
  7. Once chilled slightly roll out to approximately 1/2 cm thick and use a cookie cutter to cut out your gingerbread men.
  8. Place onto a baking tray and bake for 15-20 minutes (depending on how crunchy or soft you like your cookies).
  9. Let them cool for a few minutes. Enjoy!

Banana Protein Cookies

Ingredients:

  • 2 large or 4 small bananas
  • 1 scoop vanilla protein powder*
  • 1 cup (80g) oats
  • pinch of pink Himalayan or sea salt
  • dark chocolate bar (for the topping)

 

Instructions:

  1. Pre-heat the oven to 180ºC and line a baking tray with baking paper.
  2. Mash the bananas with a fork. It doesn’t have to be completely smooth, but it shouldn’t be too lumpy either.
  3. Mix in the vanilla protein until you reach a smooth and clump-free consistency (add some water if it is too dry).
  4. Stir in the oats and mix.
  5. Spoon roughly one tablespoon of the mixture and place it on the baking sheet. That makes one cookie, so repeat until there is no more batter left. Use the back of a spoon to shape them into nice little circles.
  6. Bake for about 10-12 minutes.
  7. Remove from the oven and let cool while you melt the dark chocolate bar.
  8. Drizzle the chocolate over the cookies with a spoon, and enjoy!

Peanut Butter Protein Cookies

Ingredients:

  • 1 cup creamy peanut butter
  • ⅔ cup coconut sugar
  • 2 scoops Women’s Best Vanilla Protein Powder
  • 2 eggs

 

Instructions:

  1. Preheat oven to 350 degrees.
  2. Line a baking sheet with parchment paper and set aside.
  3. Combine the peanut butter, coconut sugar, eggs, and vanilla protein powder in a large bowl and mix together until the consistency resembles cookie dough.
  4. Scoop out about 2 tablespoons of the batter and roll it into a ball using your hands. You may need to wet your hands with a few drops of water to keep the batter from sticking.
  5. Flatten the ball between your palms and then place on the prepared cookie sheet.
  6. Repeat with the remaining dough, leaving space in between the cookies on the baking sheet.
  7. Using a fork, press down gently on each cookie to create crisscross marks. If the fork sticks, you can dip it in water as necessary.
  8. Transfer the cookie sheet into the oven and bake for 10-12 minutes, or until the edges of the cookies just slightly start to turn brown.
  9. Remove from the oven and let sit for a couple minutes to set before moving to a cooling rack to cool completely.

Healthy Cinnamon Christmas Stars

Ingredients (for two full baking sheets):

  • 250g ground almonds
  • 100g coconut sugar
  • 1 tablespoon of ground chia seeds
  • 2 tablespoons of water
  • 2 tablespoons of maple syrup
  • 3 teaspoons of ground cinnamon
  • a pinch of vanilla powder

 

Instructions:

  1. Place the ground chia seeds and the water into a small bowl. Whisk together with a fork and place into the fridge for about 10 minutes.
  2. Place the coconut sugar, ground almonds, cinnamon and vanilla powder into a big bowl and mix everything until it’s smooth.
  3. Add the chia mix and maple syrup and mix everything for about 30 seconds until it gets a sticky dough.
  4. Pre-heat the oven to 160°C.
  5. Roll the dough out between two pieces of baking paper. Make sure not to roll it out too thin – it should be around 5 mm. Use star shaped cutters and cut the almond and cinnamon Christmas stars.
  6. Place the stars on a baking tray lined with baking paper and bake for 8-10 minutes until they are golden brown. Let the cookies cool for a few minutes. Enjoy!
