How to make RAINBOW UNICORN SUSHI

It’s almost too cute to eat…Impress your guests at your next dinner party with this cute, new food trend!

 

If you think rainbow hair is amazing, you will fall in love with the latest food trend: Rainbow sushi! No, I’m not talking about the well-known rainbow roll topped with sashimi, I’m talking about sushi that combines all colors of the rainbow, also called unicorn or mermaid sushi.

No worries, there’s no need for artificial coloring, you can use superfoods like spirulina, turmeric, matcha and beet juice to naturally color the white rice.

 

How to dye rice:

Green color: Spirulina powder

Yellow: Turmeric powder

Light green: combine a bit of turmeric with spirulina

Red: Gochujang (a red Korean chili-pepper-miso-paste)

Red/Purple: Beet juice or powder

Orange: combine gochujang with a bit of turmeric

Red: Gochujang (a hot pepper-chili-paste)

Purple: purple cabbage

Blue: add baking soda to the purple cabbage water and it turns blue

What you need (for 5 rolls):   

Ingredients

  • 2 cups of sushi rice (uncooked)
  • 1 avocado
  • 1 cucumber
  • crab meat, tuna, salmon (if you like fish for the filling)
  • 5 sheets nori
  • 1/4 cup of rice vinegar
  • a pinch of salt

 

for the coloring:

  • turmeric powder
  • beet juice or powder
  • spirulina powder (or matcha powder)
  • purple cabbage
  • 1 tsp baking soda
  • 1 tsp gochujang (optional)

 

Instructions:

  1. Cook sushi rice as usual and add the vinegar and a pinch of salt. Mix it well.
  2. Split the rice into 5 portions and put them in different bowls.
  3. Next, mix in the food colorings. For example, drizzle 1 to 2 TBSPs beet juice all over the rice depending on how deep you want the red hue. NOTE: Don’t add too much, otherwise you could alter the taste too much. For the orange color use a mixture of turmeric and beet powder, for yellow add a little bit of turmeric, for green use a little bit of spirulina powder and a pinch of turmeric. Blue is a bit more difficult 😉
  4. Purple & Blue Rice: Boil 1/4 piece of chopped cabbage in about 3 cups of water for about 30 minutes or until you’re left with about 1 cup of water. Use this water to cook 1/2 cup of sushi rice and save about 3 TBSPs of the purple water to prepare the blue food coloring. Now you’ve got your purple rice. Use some of the remaining white rice you made to make blue rice. Add about 1 tsp of baking soda to the purple water and it will turn blue, now add this to the sushi rice and mix it well.
  5. For the filling: Get a bamboo roller, add a sheet of nori and place strips of rice until you’ve got all the colors and top this with your favorite filling (avocado, cucumber, crab meat or tuna).
  6. Now roll the sushi and wet the end with a bit of water to make it sticky and place it on a platter. Once you’ve rolled all your rolls, wet a sharp knife and slice your rolls. Serve immediately and enjoy!
